OCI Gives Students the Skills and Confidence They Need
We started this school from scratch because we wanted to do it right. We believe in good food. We believe in education. We believe in the communion that takes place when people sit down together over an expertly crafted meal. We believe that learning to cook and bake should be affordable. We believe that solid skills, proper technique, educated palates, and comprehension of kitchen math are essential for cooks with futures, so this is what we teach. We are not perfect, but we strive for perfection, and we expect the same from our students. We expect them to work hard and try, every minute and every day. We do not want to take over the world. But we do want to make it a better place, filled with better cooks, better food, and a higher awareness of what it means to cultivate, harvest, render, prepare, cook, plate, present, savor, and give thanks – while taking responsible steps to make sure that those who come after us will have the same or better opportunities.
We know that there is more to being a good chef than having skills and confidence. We are passionate about understanding where our food comes from, and the practices used to get ingredients to our tables. Our philosophy extends outside the classroom and kitchen as well. We support the environment by recycling and composting. We support the community by giving food to the homeless, providing dinners for shelters, and partnering in charitable events. We support the industry by volunteering for events such as Feast and the International Pinot Noir Celebration.
In keeping with this tradition, we are excited to announce our partnership with the Portland Culinary Alliance. We believe that together we can make a greater impact in the culinary industry in Portland, in the Northwest, and beyond.
